2 Minutes Keto Coconut Chocolate Cake

Before my transition to Keto, I had a major sweet tooth. I was born and raised in Tokyo, Japan, and eating sweets was part of daily life. Craving for sweets and delicious, soft and rich chocolate cake still remains, and it is ok- Because in Keto Diet, there’s so many delicious ingredients that you can still use, and still be low carb.

This 2 minutes low-carb coconut chocolate cake is SUPER EASY AND SUPER FAST! Mix the ingredients and put it in the microwave- and ta-da! You can enjoy the rich chocolate cake in the afternoon, with your coffee and a book on your hand.

I have recently purchased Tatoni Sugar-Free Syrup Various Pack of 6 from Amazon- it was really cheap than buying them individually. Made with Splenda (I know there’s debate over wether those are actually rather harmful), but I figured few tbsp of those here and there, I don’t care. Those are fun to play with! Occasionally I put those in my coffee- only 1g carb per 2tbsp.

Calorie: 223cal, Net Carb:4.05g(Without whipped cream), Fat: 14.3g
Since my consumption of carb is around 10-13g per day, for Sunday or special occasion I make this as my sweet treat to myself. Helps with my cravings and sooth me by having relaxing tea/coffee break 🙂

2 Minutes Low-Carb Coconut Chocolate Cake (Microwave)

INGREDIENTS
  • 2 tbsp Unsweetened Cocoa Powder
  • 1 tbsp Almond Flour
  • 1 & 1/2 tbsp Melted Unsalted Butter
  • 1/2 tsp baking powder
  • 1 tbsp liquid sweeter (I used Torani SF Chocolate Syrup)
  • 1 Large Egg
  • Sprinkle unsweetened coconut flakes You can play around with toppings! Sliced almonds, crushed nuts, chia seeds, SF chocolate chips, coco nibs… be creative!
  • 2 tbsp whipped cream (unsweetened) You can sweetened it by adding sugar syrup too 🙂

INSTRUCTIONS

    1. In microwavable bowl or plate, put butter and microwave till liquid form.
    2. Once the butter is completely melted, add cocoa powder, almond flour, baking powder, liquid sweeter. Mix well.
    3. Add egg here and mix well again.
    4. The cake is done, but if you would like to add extra fun, add coconut flakes, almond slices, SF chocolate… etc.
    5. Put the mix in a microwave for 80-90 seconds. I found it the time depends on the microwave- so maybe start from 80 seconds and see how it works. If you cook too long it’ll be dense and too dry- ideal is to make the cake moist and fluffy!
    6. Add whipped cream on top and TA-DA!! The cake is ready to be eaten 🙂 Enjoy!
